Directions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a skillet, heat the olive oil over medium heat and sauté the chopped spinach until wilted. Remove from heat and let cool slightly.
In a bowl, combine the sautéed spinach with the feta cheese, ricotta cheese, oregano, salt, and pepper. Roll out the puff pastry sheets on a lightly floured surface and cut them into squares, approximately 3 x 3 inches each.
Place a spoonful of the spinach and feta mixture in the center of each pastry square.
Fold the corners of the pastry squares toward the center, pinching them together to seal the filling inside.
Brush the tops with the beaten egg for a golden finish.
Place the chips on the prepared baking sheet and bake for 15 to 20 minutes, or until golden brown. Let them cool slightly before serving.
Variations and Tips
For a little kick, add a pinch of red pepper flakes to the filling. You can also experiment with different cheeses, such as goat cheese or mozzarella, for a different flavor profile. If you’re short on time, use pre-washed baby spinach to skip the cutting step. These chips can be made ahead of time and stored in the refrigerator; simply reheat them in the oven before serving to keep them crispy.
